Herb & Parmesan Cheese Crackers

One of my daughter’s favorite “processed food” snacks is pre-packaged cheese cracker sandwiches.  But the sheer volume of preservatives and food-like substances in them have made this snack taboo in our home.  Lately, she has been having a real craving for her favorite cheese crackers. I made her a deal.  I told her I would make her some from scratch and they would be even better than what she remembered.  Her response to me was that I wouldn’t be able to make them have “dehydrated cheese”.  My jaw nearly hit the floor.  She wanted dehydrated cheese crackers?!?!?!  Really?  I set out to prove her wrong.

No, I can’t make dehydrated cheese.  But I can accomplish a similar texture using REAL food ingredients.  Yesterday, I made Herb & Parmesan Cheese Crackers for her.  The crackers she prefers are Ak-Mak.  They are 100% stone ground whole wheat with only REAL food ingredients.  They really are quite amazing.  They hold up well and I can find them at the regular grocery store.

When I handed them to her after school yesterday, she looked up at me with a blissful look on her face and was so excited that she had cheese crackers.  I asked her how she liked them.  She said they were even better than the store-bought ones and asked me if I made more.  I told her no, but we could make more by doubling (or more) the recipe.  I also told her this was a very simple recipe and that she could make them for herself.  She is looking forward to being able to make her own cheese spread for crackers in the near future.

Herb & Parmesan Cheese Crackers

Serves 1
Prep time 10 minutes
These Herbed Parmesan Cheese Crackers have just the right balance of salty parmesan cheese, the creaminess of the cream cheese and the savory blend of spices and herbs.

Ingredients

  • 1/4 cup parmesan cheese (finely grated)
  • 1oz cream cheese (softened)
  • sprinkle onion powder
  • sprinkle garlic powder
  • 1/4 teaspoon dried parley
  • 1/4 teaspoon dried basil
  • 6 Ak-Mak crackers (or other cracker of choice)

Directions

1. Combine grated parmesan cheese and soften cream cheese in a bowl. Add onion powder and garlic powder. Before adding parsley and basil, rub them in your hand to almost a powder. Stir well.
2. Spread cheese evenly over 3 crackers. Top with remaining crackers.

Note

My daughter has always loved cheese cracker sandwiches.  She loves these even more.  It's a perfect after school snack!

It would be very easy to double (or more) this recipe for a party.
